Welcome to my world. I love food, flavor and yes, fitness. I eat food, cook food, heat, boil and bake. I wine. I dine. I nibble. I nosh. I'm a foodie residing in the heart of the West Village who, ironically, came to the Big Apple for a career in dance. Dance made me realize that my body was a tool and healthy eating and living can meaningfully impact your way of life. I have learned and continue to master the importance of health and well-being and the effect that food has on both the mind and the body. It is these things, my love for delectable dishes and my passion for fitness and health, that has led me to where I am today. I have found a way to eat well, enjoy food and live a strong, active life through movement and cooking and I want to share it with others.
The heart of the matter is that I cannot live without chocolate and indulgent bites. I have one major sweet tooth! After developing several food sensitivities, I created O'Cookies- my original line of decadent healthy snacks- so there is something that I can enjoy and properly digest without the stomach aches that I had growing up. Sans the excess, and all of the gooey goodness, my cookies are made with only the finest and natural ingredients. We have vegan and dairy-free options as well, so cookie monsters of all kinds can enjoy my bites!
A graduate of the Natural Gourmet Institute for Health and Culinary Arts, Erin spent time working in the kitchen at Pure Food and Wine after several years in the dance performing world and instructing classes at Physique 57. Kathleen has worked for New York City and Philadelphia’s largest communications agencies, representing Fortune 100 and 500 companies, nonprofits, government agencies and public and private sector institutions. Trained as a journalist, she has placed hundreds of stories for her clients in print and broadcast media outlets like US News & World Report, Forbes, The Wall Street Journal, ABC News and FOX News as well as in regional and specialized publications like The Philadelphia Inquirer, The Miami Herald and Vegetarian Times. An active fundraiser for Susan G. Komen Race for the Cure; a Board Member of Urban Tree Connection, a 501c3 that engages neighbors from Philadelphia’s most disadvantaged areas in urban greening projects; a founding member of the Leadership Council of The Lemon Society of Philadelphia, the young professional association of Alex’s Lemonade Stand Foundation, which raises money to find a cure for childhood cancer; a supporter of UNICEF; a volunteer at Boston’s largest animal rescue league and a member of Boston’s Museum of Fine Arts, Kathleen believes supporting the arts and her communities are paramount. She is a former Board Member and current member of The Philadelphia Public Relations Association, the nation’s oldest, independent PR association. Kathleen graduated from Hofstra University.
